I'm thinking you (or I) could thread a bolt through the blade holding board to control its height with precision.

That would certainly work ! Give it a shot on your version. Believe it or not I did consider the same thing. But given the variance in blades (smile , width ,etc) I find using a small wooden wedge between the base and hinged platform coupled with the adjustment of the focusing rail to be adequate for my use. ... Did not want to over engineer a turd. A mechanical Stage, such as on a good inspection microscope like Alex Gilmore uses would be a better choice..But Hey.. ?
what, like this?

its a coach bolt, with a nut and washer under the board and a tap in thread (like you use for furniture) fitted to the top of the board.

Im wondering about those magnets Wirm, Is there any chance of magnetizing your razor? And if it does wont that attract swarf particles back onto your edge while honing? I really like what you made there.
Yes, the razor can become magnetized , especially if it is slid along the surface of the platform when placing or removing the blade. To mitigate that occuring , I counter sunk the magnets from the back side , leaving about 1/8 in of wood to the top surface. I had it happen once when using a experimental magnetic holder in the bathroom. I demagnitized it by passing the blade through a tool mag/demag as below.
