The stabilizer is the machined reinforcement shoulder between the spine and edge at the shank. A Henckels Friodur 70 1/2 has a stabilizer and the Friodur 50 1/2 is made without a stabilizer.

I think that I've figured out part of my problem. When stropping, do you roll the blade over the edge or the tang? I realized today that I've been rolling it over the edge.
The stropping motion is spine leading - edge trailing, the opposite of honing on a stone. At the end of the stroke, the blade is rolled over on the spine and stroke direction reversed just before edge touch down on the strop surface. The spine never breaks contact with the strop. The edge flips over with each change of direction.
