When you cut it, it is pulled ever so slightly out of its shaft. Cutting with the grain allows the hair to still be aligned with the shaft allowing it to freely grow out again. Cutting against the grain causes the sharpest end of the freshly cut shaft to immediately dig into the follicle. This will not grow back out and is what we term an ingrown hair.
