Sydney? No idea. You didn't mention vintage, so no, you won't find much at all - that market doesn't really exist in retail, outside of antique stores. Vintage straights outside of selling forums are a treasure hunt.
Nothing wrong with Dovo, and it's the first I've heard them called trendy. Straight shaving in itself is as old school as you'll get. Vintage blades are just cheaper, but the quality is variable IME. I sold my rather average Solingen vintage because it wouldn't cut even after a good hone, and I've found Dovo Special is far superior IMO. It's still hard to learn either way, so don't get fooled by all those vids that make it look easy, and the guys who reckon they've got excellent results after a few attempts; these are the exceptions to the rule. If true.
If you want vintage, then you're going to have to browse the classified here or on Badger & Blade, who have a much busier buy sell trade, so lots of stuff comes up all the time. You could join the great southern land social group on there and ask about finding straights in Sydney. I'll bet they'll say Antique shops though.

Depending on where you buy from it is likely you will need to hone your new razor. There are certainly plenty of guys around that could hone your razor for you. Oz, who is most likely too much of a gentleman to spruik his services on this thread, has already been recommended and is the only bloke I know of in the country who has offered his honing services on any sort of a commercial level(based in this community anyhow... I know nothing of B&B) I can personally highly recommend his services too. A great bloke to deal with... and I think he lives near you. You could also try Jimbo (whom I think is an advisor of this forum) who has a legendary reputation on the hones. I think he is based in Brisbane though.
