I bought one of Tony's second 3" Red Strops plus I have the paddle 4 sided strop from Tony. The straight Is a Dovo IN OX, Stainless I picked up on Ebay for a good Price.
I don't really notice any discernable difference in the quality of my shaves between a carbon and a stainless (assuming both are sharpened properly). I expect the difference is that the stainless will hold it's edge a bit longer (and of course won't rust). Let us know how it goes.
I am wondering whether the stainless will have to be stropped longer on the leather? How often would you use the linen or the paddle strop?
I would treat it like any other razor. At least that's what I do. I strop it before every shave (20 laps on linen and 50 laps on leather).

I just re-read your first post. You said it was new so I was wondering if it had been honed properly before you got it or did you use the pasted strop on it?
I would go 25-30 each on the linen and the leather before every shave. The pasted side of the paddles are only used to refresh or resharpen a razor.
I think you will find the stainless razor will stay sharp a good bit longer once you actually get it sharp.

I have a Dovo stainless with the pearl handles. It was the only Dovo I've ever seen that was actually shave ready out of the box. I actually used it that way for quite awhile before I honed which improved it even more. Its an outstanding razor. I wouldn't treat it any different than a carbon-steel razor. You'll find it holds an edge longer but honing will take a few more passes to maintain that edge but don't go overboard on it. Maybe an addition ten passes and check.
