As a beginner should I stay way from the stainless steel blades?
Stainless or carbon should make no difference, whichever you choose for whatever reason will do fine, just be sure to buy quality. Best of luck and I truly hope you enjoy SRP!
Boy, this is the definition of subjective.
My first razor was a Dovo Pearlex INOX, passed down to me by my father. Dad was a practical man, a millwright by trade, and swore by stainless and German steel in particular. I've used both carbon and stainless. My opinion is that stainless, when properly honed, gives me a superior shave.
And now, cue Pandora's Box...:)
When purchasing vintage how would one differentiate between the two.
I have a Dovo stainless ebony. It is one of my favorite shavers, and it is just as easy to strop and care for as my regular steel razors.
On the vintage straights, you'll see phrases like Rostfrei, INOX, stainfree, and others.
No from the good ones, yes from the bad ones.
Good = Dovo, Boker, Henckels (friodur), Hess, Heljestrand, Filarmonica, C-Mon, Dubl Duck
Bad = everything else
There are few others of the good ones, but they're fairly rare, so the simple rule above makes it quite easy.
