I would like to hone my razors. I would like them to be as I received them. I feel that they tung just a hair or are starting too.
To do this do I have to make the bevel again with the 4k or can I go to the 8k and then to the 12k to polish it up.
One more question. I see some people using tape and others do not, how do I know if they used the tape for their bevel and should I use it or not.

Your going to get a ton of different opinions on this because you asked some pretty open questions, so it is going to get confusing...
What Stones or Hones do you own now ??? this will narrow down the answers
On the tape question, first the easiest way is to ask the guy that honed the razors :) but if it is really unknown then you have two choices,
1. Re-hone without tape which will be fine but might require a small amount of extra work to meet the bevel
2. Re-hone with tape which will be fine either way
(In testing I did in the past it took me approximently 20 laps extra on a 4k Norton to erase the bevel created by tape, this was on a newly cut bevel.. On a well shaved bevel there was vitually no difference at the 4k level for a re-fresh)
That was quick! Three of my razors are all new out of the box, They are a Dovo Bismarck, 8/8 Revisor and a custom purist. The other two I know were honed with tape.

Have you read the instructions and watched some of the vids ???? basically how prepared are you ???
If I were you I would start with one of the Taped razors and bury yourself in the JaNorton thread and begin there.. there is a ton of info in that thread, and if you start there and stay there until it works with one razor, then the learning curve will be much shorter

It sounds to me like all you need is a touch-up. Look at the bevels first and unless they look lacking just start with a high grit and do a FEW passes and see what happens. If the bevels need a redo then you'll have to go down to a lower grit.
A shave ready razor that was only dulled by shaving can be sharpened on the polishing hone.
An out-of-the-box razor may need to have its bevel set before polshing.
