Gents,
I've not had the pleasure of trying more than my first and only brush, which is at the less expensive end of the badger lineup.
Say that I was thinking of trying something new, are there any specific characteristics of the brush that are better suited to specific purposes, such as face vs bowl lathering, soap vs cream, skin type, etc...
Is it all a matter of personal preference, or are there some general "universally accepted" (ok, that might be a bit much) things to look for?

You will get plenty of opinions here and they will probably all be correct. I'm of the mind any brush will do the job no matter if you use soap or cream or use face lathering or a mug or scuttle. I think the feel of the brush is a personal pref. Some like a marshmallow on their face and some hate that and like scratchy and some like inbetween. Some like synthetics because they care about animals. If you use hard soap for instance, a brush with backbone will make it a tad easier (in my opinion) but not enough to endure a brush quality you don't like.
I say, in the end get what you like. They all work great in the end.

That has been my experience also. I don't have overly sensitive skin but if I did I would be asking for recommendations from somebody who has. That would narrow your choice down quite a bit.
Handle length may be an issue if you bowl lather in which case I would look for longer handles than the one that comes with a Simpsons Chubby for instance.
