are you in europe?

I'm in the U.S. I've never seen a sound leveling control option on my iPod. I think I have a classic.

Well on mine (recent Classic 80 GB) it's under Settings> volume limit>Press play to lock volume limit.

You could also try to put Sound Check to off under : Settings> Sound Check. It limits the variation of volume across musical pieces.
