I hit the Bellagio for breakfast last time I went, good stuff.
Unfortunately my wife dragged me there about 2 hours after I had gotten back from the blackjack tables and all I managed was orange juice and a bit of smoked salmon.

I would say the buffet at the Wynn has the best buffet. The Buffet at the Bellagio used to be fantastic but it has dropped off the last few years.
