Inlaying materials in this hard, high carbon steel is not easy but people have done it...I just don't know how! :)

Certainly a novelty. I like it. I find it very cool and unusual. I definitely see what you were going for. Probably be quite popular with that zombie apocalypse fixated crowd. Not sure how much I would use it but it would make a great functional display piece...it is functional isn't it?

How do you hone it?
Wouldn't the copper thingies raise the spine off the stone and give you a weird edge angle?
And would the copper thingy react with the steel and produce a chemical reaction?

copper in the place of contact with the stone does not protrude, only higher. If you are worried about a stone, you can stick electrical tape.
copper will definitely react and brass on rivets will be, and steel itself will be with moisture in the air.
