Honing large razors like this one. Because of the width are razors this wide harder to set bevels on and hone??

I think you are referring to the width of the razor between the spine and the cutting edge of the razor. No setting the bevel is the same as smaller razors, providing the thickness of the blade is correct. The ratio between the thickness of the spine and the distance between the spine and the cutting edge is important.
