Last time I had Black Bear I went the Green Chili route,
Okay, looks good. I thought you had made some sort of organic brush you could eat when you got done with it. When I raised my own beef I always had a bag of jerky nearby. Darn it, you made me hungry.
The backstrap is the best cut on any animal that has one. Make your jerky out of scraps!
That would work,and lots of cumin to mask the flavor.i shot one outside Weiser I.D. in the mid 70s,275 ish lbs.
The backstrap was all that was edible from that critter,the rest was awful.
Buddy got one in Norcal couple mos ago,had it all butcherd and flash froze,asked if I wanted some,I took the backstrap:)

For the record, I haven't met a jerky I didn't like, so I might be biased if I were a judge.
