I recently thought, "If for some reason I knew I'd be having my last meal what would it be?"
It would either be a whole plate of, or at least a generous portion of sauteed fresh mushrooms like Trumpet, Shiitake, Enoki, etc. Just sauteed in olive oil with some fresh coarse ground pepper and a pinch or two of sea salt.
I love those things; the flavor and the texture of those meatier mushrooms are just the best.

Nice. Mushrooms are a BIG thing in Japan, and I never realized how many different flavors they can cover. Shiitake (two i's will help get past that language filter!) and enoki are two of my favorites as well; I love matsutake as well, but man--talk about expensive!Quote:

Personally, I am not a fan of mushrooms. It's partly a texture thing, partly the idea of eating fungus.
EXACTLY! Sautéed with pepper. I also like a batch of battered deep fried 'shrooms if they're done well. I always throw them in my omelettes. My wife makes a super tofu in mushroom gravy dish that even her carnivore family can't resist.

A winner on pizza is to slice some fresh mushrooms and fry them in butter with a clove of garlic, not letting the garlic go too brown. Slap that onto pizza, butter and all! :D
Also, dried mushrooms can add bags of wonderful savoury flavor to things. Dried porcini (ceps) rehydrated and used to make mushroom risotto is a truely wonderful thing.

Just had a big helping of a stirfry I made last night, but was to tired to eat it after a brutal workout.
It had tons of exotic fresh mushrooms in it. YUM! many different flavors and textures.
