Five fried every morning on toast, topped with a ridiculous amount of cayenne pepper. Masochistic but I love it!
Eggs Benedict is probably my favorite, although it's rare to get since it's labor intensive and few people know how to make Hollandaise sauce (or how to poach an egg). Chinese tea eggs are also nice, I used to eat them for breakfast when I lived there, both chicken and quail eggs. Basically you hard boil some eggs, crunch up the shell but don't peel them, and then simmer the eggs further in black tea with a bit of Chinese five spice and soy sauce. They also eat scrambled eggs with stewed tomatoes, which I still like to eat as well. Just add some tinned tomatoes to your scrambled eggs before you finish them in the frying pan.
Eggs Benedict, hands down but as I only get that if I'm eating brunch at a place that knows how to make it I usually resort to crispy hasbrowns with cut up eggs over easy on top, with sausage/peppers/onions mixed in the hashbrowns. Or if I'm on the run a nice roll with two fried eggs, bacon, salt/pepper/ketchup. I will be trying the recipe in the OP soon though.
Poached and perched on toast or soft boiled with toast on the side.
Hard Boiled. I ditch the yolk. 4 every morning with Tabasco. Rather bland I know, but it's what does me good.
Over easy between bacon and toasted texas bread, and whatever hot sauce sounds good at the moment, with a snickers on the side
I enjoy a good southwest scramble. Sautee a quality smoked sausage with hatch green chilis, a little cilantro, add eggs, a few crushed tortilla chips, cheddar and monterey jack cheese, and scramble together. Top with a few dashes of Franks Red Hot if so inclined.
