I am working on a new tempering set up, pid controlled deep fat fryer.
My question is, can I chop off the spade connector off of my thermocouple and screw the wires to the back of the pid controller.
I am thinking of course I can, but I might be missing something.

Why not buy a female coupler and wire it to the PID and you can use the thermocouple with both tools?
As in: Universal Female Thermocouple Connector:Universal Female Thermocouple Connector Mates with Standard Round Pin Male or Subminiature Flat Pin Male Connectors - USTW-T-F
Or buy a dedicated thermocouple for the PID.
One of the sales fellows at Omega turned out to be a blacksmith. When I called once, I benefitted from a lecture on the lifetime and degradation of thermocouples. Now I tend to buy them two to four at a time and keep one set aside as the "test" unit when I suspect that the frequently used TC is beginning to give a suspect reading. They do fall into the category of a consumed item rather than a permanent tool.

I did this with mine as my thermocouples had the forked connectors like yours & I changed them to the K type plug
the actual wires on mine are very small & I had to solder them to the pins for the plug
