O1 and canola oil is just fine for razors, even if you have a gas forge. I do use a temp probe though.

O-1 will work fine for razors. The key is whether or not you have the equipment to heat treat it properly. If you plan on forging O-1, you will need a kiln with a ramping controller for a proper anneal. A kiln is a real good idea for austenizing during the hardening process.
If all you have is a forge, or torch, I suggest 1084. It is a simple steel to work with, and you don't need fancy equipment.
With all that said, The dark layers in my Damascus are O-1. That's because I can't find any O-2! :)
