Has anyone tried S30V in a straight razor? How well would it work? It seems relatively fine-grained as far as stainless steel goes, and keeps an edge.
I'm thinking of grinding one and send it in to be heat treated to 61 rc.

I've got two made by Robert Williams. He is Papa Bull on the forum. You might PM him or call him on the phone. Here is his website. He is a nice fellow and I think he would answer questions you might have. My two shave just great.
So far so good. I've shaved with each of them 3 or 4 times. I have RAD so I have a lot of razors and a large rotation. I haven't had to do more on one of them than strop it. The other I bought used and had to hone it which made me appreciate diamond plates and paste. :)
I have a couple kitchen knives in s30v and dread when they loose their edges.
I'm sure the edge retention is great, but what are they like to hone :) I had a chance to get one when I ordered my RW custom, but I said "no thank you". I'd rather have something easier to keep sharp. That's just me...

My S30V knives were pretty easy to hone, from reprofiling to mirror polished edge. I don't think it would be too bad. I've done S90V and ZDP-189, those are worse than S30V, but wasn't too bad either. Then again I use fast-cutting diamond hones with a couple Shaptons here and there.
The design I have in mind requires 10x more steel removal when honing than a full hollow grind, but I think it's manageable as the grind would also allow me to use more pressure.
Here are my two. The 7/8 with the cocobolo scales came shave ready from John Crowley at the Shaving Shop and the 5/8 with the abalone celluloid from a forum member in the classifieds. I did hone that one and it was a tough customer. :) I really like the feel of it and the way Robert laid out the jimps. Both are excellent shavers.
