I did some test sharpening with an old cheap knife. When the blade came across the edge of the stone it did crumble a slight bit. Not sure if its because it was a squared edge on the stone or from age.
Where would this put me?
Edit: I should note this was on the fine side of the stone and not the coarse.

If that edge gave way at all, then don't Ez-Off it.
Use a tooth brush with Simple Green , then Wd-40 it.
Then take another look at it.
