I understand these are made by the same company and the Eschers are more collectible. Which is better for actual use? Is there much of a difference? Thanks.

I've had both. Couldn't tell any difference between the two. They're both quality Thuris
They are both noted as being select Thuringian hones and are fairly collectable. Droescher or SRD sold pretty top shelf products. He also had barbers hones and coticules and razors. The whole range was select quality products, I would not be surprised if his hones were pre selected by Escher. I would say grab what you can find at the best price available if you are looking for top quality.
I might be (shudder) wrong, but I believe Droescher was only a supplier of barber stuff. I've heard that Fox, Droescher, others I can't recall right now, sold Eschers, Hohenzollerns, with their own brand name on them. Not sure how true that is. Pike sold Eschers with both their own, and Escher's name.
I bought the Escher. I bought it primarily because it is a much larger stone than the Droescher and will be easier to work with. My impression is that both are quality thuringians.
Thüringen hones were quarried in Thuringia, Sonnenberg area. Several firms bought the hones from the quarry, stuck their own label on them and sold them on. Eschers being the most famous or fanciest or whaterver fetch the highest prices. I have had a few. The one with the barbershop scene on the label (Y/G) is the best. I have had a dark grey one with E&S in a trophy cup that was of a lesser quality than many generic Thuringians I have handled. I have 2 Hohenzollerns that I like very much, one being YG, the other dark grey. I also have a Stukenbrock that is slightly coarser.

I have one Hohenzollern that I love. I would have bought another but they rarely come up for sale. With all the different stones on ebay, it seems best to buy a brand you know. There are lots of mediocre stones among the unnamed great ones.
On the label it says: by E.S. which is short for Escher and Son(s). So it is a real Escher and a real Droescher.
