Nice Thuringian Stone....before using it you should decide if youre going to use it that way or if you might be interested into sealing the lable. Its a question if you wanne keep the stone for yourself or might be interested to sell it some time.
Before usage check if it is flat! If you progress with WD Paper from 300/600/800/1000 normally finer is not needed...
Actually these are stones which are quite easy to use. Progress to a 10k or 12k stone, then go on a light slurry with some laps (15-30) then finish the last laps with plain water. Alternatively you can do the last laps under running water....

The most common process is to seal the lable with a type of epoxy glue or spray. A variant should be used which doesnt change due to air or UV conditions. It shouldnt get blind or change its color during time....
Spray or paint over the label until the complete surface is sealed and the paper is fully soaked. It surely changes its look, the paper gets darker....
There was also an appoach to seal with a special sealing which was used to conservate old papers, right know i dont remember where it was posted....

On those I've used a spray by Krylon called Preserve It. Meant for documents, it worked well on back labels on a number of Eschers. On the smaller end labels I used clear nail polish.
If your stone is like the later Eschers the label can come off fairly easily once it is wet. I did that with those later ones I had, and just kept the label separate so it wouldn't get tattered. Here are old pics so you can see what I mean ;
