Most wanted: That depends on the the person who wants it, and how much they want it. But nobody can really measure how much a person wants something, unless they tie a dollar amount to the "wanting". And then other things like income will come into play.
Tough question man. I don't think it can be answered without some pretty rare, valuable, and sought after statistics.

15K Welsh hone I just bought off ebay. Only a handful have ever been on offer on the bay.
If I had a Devonshire oil stone, I could get several souls for it...

The rarest I've seen is a yellow-green Escher and I only have one in my study collection. It's actually yellow. I also have the standard "celebrated" ones that are green but they're far more common. The yellow-green has that coolness to the touch which Eschers have and is very smooth.
No pics so you can say it didn't happen but I saw a Nakayama Asagi in the shape of Mt. Fuji. That's gotta be rare.:)
For me its very simple, its a labelled "Magog Oilstone"
I'm agree with Craig ( Eleblu05), the most wanted is surely the Cutler's Greenstone from Snowdonia area, there are also Water of Ayr, Special Stone or Moughton Whetstone that are rare.
As Alex would probably agree Devonshire oilstone.
For the true stone collector ..... the one you haven't gotten yet. :p
There is a rumor going around on the net about a "Chronik-stone" that was mined on the dark side of the moon.
Apparently the frictionite hones are now worth a fortune.
