Any where around 220 or 320 grit should do just fine. But when you can afford the DMT, I'll just say they're well worth the money.
Just make sure when you're using sandpaper to lap that you've got a flat surface to lap on! If you have a ceramic stove top they work best. Whatever you decide to put it on, put some water on the surface, then the sand paper, then more water. The water underneath the sandpaper will help keep it from slipping while lapping. I personally use 180, then 400 then, depending on the hone, go up from there.
I've been able to find very flat and smooth pieces of natural stone tile at my local Lowes. They often have ~12 by 12 pieces on sale for only a few dollars.
Harbor Freight has 2X6 Diamond blocks (3) for ~ 15$us. Most days they have a 20% off coupon that you can apply. I find they work well.
With the 1000 you risk getting the plate sucked to the stone, which can be more problematic than you'd imagine it to be. :)
325 is more than fine enough.
For sandpaper, 320 would be great.
Just be sure to check that your paper is wet/dry. If it is the wrong kind, nasty things will happen to your naniwa.

i take 400 paper for all my stones... (i have a lot stones) the finer stones have to be lapped with her own slurly after the lap on sandpaper
