I am buying Nanis to replace my honing film as it runs out. ! have a 10K. I plan to buy an 8K next. But should I go to 5K after or jump to 3K? 8 to 3 seems like a big gap, unless the three is really smooth.

The 3-8 is fine so is the 5-8
Naniwa's Combo hone is actually a 3/8 so that is something to keep in mind
I generaly us the 1k, 5k, 8k, 12k and do not find the transition/jump to be to large.
On a few that are very hard steel I will slip in the 3k, but this is only to make it a bit faster the 5k will get it done and fairly quickly.
i have 800-5000-12000 and the jump isn't large. need only a few more steps
I got the 12k first, then the 8k, then the 3k and thought the same thing, so I bought the 5k and now realize that with the Norton 1k that I already had, I didn't need the 3k to begin with because I'm not restoring razors, I'm just sharpening and messing around with mine. I'm going to keep the 3k but don't need it for what I do. About a month ago, after watching one of Lynn's videos I asked him, "Which would be better, 3-8-12, 5-8-12 or 3-5-8-12k in your opinion?" and he stated either would be fine, he just happened to get more consistent results with the 5-8-12 when using Naniwas for a regular razor.

Basically, you will find that the more hones you have in your progression, the fewer strokes you will need on each hone and conversely, the fewer hones in your progression, the more strokes you will need to achieve the same result. I prefer fewer strokes per hone and more hones in my progression.
1k, 3k, 5k/6k, 8k, 10k/12k, 15k/16k, Jnats

At any rate, I strive for the sharp edge and the close shave. I believe more hones in the progression helps me get there. JMO

Edge-wise the jump from Naniwa SS 3k to 8k is not a big problem. So is the Jump from SS 1k to SS 5k.
But I find the best quality the Naniwa SS do posess is their ability to mirror polish an edge to the maximum.
You will encounter leftover scratches if you jump too much, but that is merely an optical issue.
The shave is usually not affected by this
I'm going to go for the 5. 5-8-10-balsa/crox will handle 90% of the stuff I do. Seeing scratches under the loupe grates my soul. I can always get a 3 later, if I have a hankering for it.
im in the same boat as you. are you getting the 5k to set new bevels or to refresh dulling edge?
is very very hard to set bevel on 5k
My bevels get pretty shiny, but if there are residual scratches, and the shave is good, I just ignore them.
I finally ordered the 5K. I have been buying the stones from japan so I could get the 20mm on stands.
I borrowed a friends Naniwa SS's and found that they work easier on my Dovo's. My TI's and harder steels seem to still like my Shapton GS better, at least to me. I'm talking only about feel though. Just arrived are my Naniwa SS 5, 8 and 12K. This with my Chosera 1K is the perfect progression for me until I introduce them to final polishing and stropping. The jump from 1 to 5 to 8 to 12 works very well for me. I also think jumping from a 3k to an 8k is plausible but might mean that you need to spend a bit more time on the 8k. You really, though, will eventually need a 1K. The Naniwa Chosera is, in my opinion, the best there is. It will save you a large amount of time and not hurt your spine. I'm NOT a taper. But, to those that tape I would say; "not that there's anything wrong with that"
