Yes you can although it will take longer to set the bevel on it as the new angle will line up above the edge. You will miss the edge of the blade if it was taped before.

No, if it was taped before one layer of tape will be the same plane or very close.
If it was not taped, you are in effect creating a steeper bevel and it will close/come together quicker not slower. You do not have to completely re-set the whole bevel, just the edge.
