I did a similar approach on a near wedge blade that may well have been reground on a bicycle grinder.
Put the blade flat on a 800 grit and worked it until there was flatness on the spine and edge. One side required more attention than the other. Took the blade directly from the 800 to a 4000 and just polished the sides. I did not worry about bevels.
Then I double taped the spine and did the normal honing from 800 to 12000 and a finisher. Shaved great.
