I hate when that happens..!! Dealing with one that keeps crumbling just as the bevel meets, myself. Only a couple spots doing it now, so hopefully I'm finally getting to good steel. Its been a workout, and a testing of patience.
I had one razor that I honed three times. Each time everything looked perfect but the razor wouldn't make it half way through the first pass before the edge was trash. Finally ended up breadknifing off a lot of steel and got to where it would keep and hold a good edge.
Frustrating to say the least.

Another two beautiful quality French razors on the stones today, both mint factory edges, these will be top-notch shavers I'm sure.
I couldn't find the thread for the 1k challenge, but it's still applicable in this thread I think.
I picked up this Ontario Cutlery Barber's Special off the bay recently. A quick check with the loupe showed a spot of corrosion on the edge, so I took it to the 1k to hone past the bad spot. The steel is quite hard so it took a while, and I had lots of time to think. I realized it had been a long time since I've set a bevel, and even longer since I've tried to shave off of the 1k. My honing has developed a fair bit in the last year, so I thought it would be interesting to try again.
Well, I was pleasantly surprised with the results. I shaved off 5 days of growth with ease. It wasn't my closest shave ever, but it was comfortable, and I didn't get any weepers or irritation. A definite step up from the last time I tried!
I think I'll try shaving off of every stone in the progression with this razor.

'IF' you want to go a step further, try shaving right off of the hones, THEN strop the razor and see what the difference is.
When I was first learning to hone I did just that and it was a real eye opener.
Got on the stones today for the first time in a long time.
Couple of Irish blades, and a couple of Japanese blades.

Came back with very little effort.
Still need to strop, but a pleasant day so far.

Bevel set quickly with the, "Green Brick". Two layers tape.
Progression :
Butterscotch, Washita/water
Lt. Blue Thurigan, slurry to water
Coti, Slurry to water
BBW, Water.
Blue/Green Barbers Delight, Slurry to water on one side, water to finish on the other.
