How do you store your hone? As of right now, I've been leaving it submerged in water under my bathroom counter. Any thoughts/comments?

What kind of hone are you using? If it's a Norton 4k/8k, then storing it in water should be fine. Just be sure to change the water every once in a while or else it'll get slimy.

I store most of the ones I use fairly regularly on a heavy duty shelf in the open air.

I stack mine similar to how Chris does, except it's not as eye-popping a collection.
Since it is just me and my cat I keep mine in the kitchen cabinets. He doesn't mind as he never goes in there. :) I have kept my 1k and 4k single grit Nortons in water and can vouch for the slime if you don't change the water. I don't use them often enough to justify keeping them that way at present. BTW, on the single grit the 8k doesn't need the soak. Just a splash.

P.S I store all my gear in my walk in closet. It's large and has mulitple shelves. I put low shelving on the floor, like you would use for shoes, two levels, which gives me three levels with the floor. I use that for all my hones, and I have a lot of hones. When I get an order in from Rob it really gets crowded.

Whatever I'm not using at any particular time is stored in a box on a shelve elsewhere.
I am at work now so cannot access a photo of my Rambunctious now. I named him that because he is exactly that. Here is an old thread where you can see a photo of him as well as photos of many other member's feline companions. You might even add some pics of your own cats to it. :)
:OTYou better believe it and many more than that which I've sold or traded. I don't smoke when I'm sleeping or eating. I've conceded that much. As we speak I'm at work smoking a 1938 Dunhill shape 60 patent shell. Gawith & Hoggarth's Coniston Cut Plug from the Lake District on your side of the pond. We aren't supposed to smoke in the shop but when there are no customers the other guys don't mind the pipe. They might figure if it doesn't kill them something else will.
My Nortons came with cases, so I just keep 'em in the bathroom cabinet in their cases.
My Nortons, and other edge bevelers, are all stored in a toolbox that only keeps my sharpening tools, including steels, ceramics, etc. My barber hones are kept in the bathroom in several small boxes that I bought at Michael's craft store. I glued strips of wood to seperate the hones so they don't knock into each other, and the stones are laid sideways. BTW, Michael's sell these unfinished boxes for really cheap, and you can finish them yourself-not to be taking business away from any SRP boxmakers, and I know there are a couple!
