The tape provides a barrier that prevents additional wear on the spine, unless you've somehow ground through it, which I doubt. If you're tape layer is intact and covers the full length of the spine then no further spine wear will be taking place.

Esse: as MickRussell mentioned, electrical tape is good to prevent additional spine wear. If spine wear already exists, oftentimes I find that the bevel seems too wide for my tastes, since the angle of the blade on the hone is smaller than when new. To compensate for this, I add a couple layers of e-tape to "replace" the lost metal. One of the few times I will not use electrical tape when I hone is when I find a razor with obvious uneven spine wear. In those instances I will hone with pressure on the spine for a while in an effort to even out the spine wear. This doesn't really work if the blade is warped though. In that case I suggest the strokes I mentioned earlier.
