Kitchen knives too sharp

My problem has always been that I am not coordinated enough to do a good job myself. But I can now shave with either a razor or kitchen knife. Either will get the job done. Prior to that I couldn't. Plus, if I were to start sharpening my own knives, I would have probably had to invest in lower grit stones that I have anyway. If you jare uncoordinated like me, this system works and very well.

I got my oldest son a nice Japanese chef's knife for Christmas because he likes to cook quite a bit. I also got him one of those 12" ceramic rods from Amazon. I was playing with it myself on some other dull knives in the house, including a somewhat dull stainless chef's knife, and was frankly stunned at how quickly and easily it works-almost like cheating, really. Not sure I want to go to the trouble of hand-honing knives any more.

I've recently acquired it and have to say that it not only makes the sharpening process childs play but puts, as the name suggests, a wicked edge on the knife. The bevel it creates is perfectly even. I got this after being completely disappointed with the knife shop that I used to bring them to. They hired a few extra people to take some of the pressure off of the staff and the knives were coming back without so much as a bevel, a sloppy job to say the least. I have a lot of knives in my kitchen and my wife is particularly hard on their edges. So I need to be able to get them sharp easily. This gets them in better working order than the "professional" services I've used in the past.

Wow, that is an expensive honing gadget. One of my friends has that, I had no idea how much that thing ran. I beat his edges free-hand with just a set of small Arkansas stones. I haven't given it a test run myself though, so I'll leave it up to you to extrapolate whether that says more about the tool or the loose nut behind the wheel. My guess is operator error. :hmmm:

A few years ago I considered the Wicked Edge and the Edge Pro. Both had some features that I liked and some that I did not. What finally swayed me was talking with the owners of the two companies. One guy was, well, let's be polite and say that I was not impressed at all. I did not need being lectured to on the fact that his device could hone straight razors better than anything else. The other guy was very helpful and straightforward in every way.

I am very happy with my Edge Pro.

As long as you're not using it for a SR, I think you'd be happy with the WE product. Looking at the EP, it looks like a similar concept. I don't even want to hint at the topic you're introducing else this topic will surely explode into one of the endless heated debates that I've witnessed on the forums. The WE system works very well on KNIVES. That is all.

I agree. I believe that it does work well for knives.

There actually is a newer device now that is sort of a merging of the best of both that I would buy now if I were to do it over again.

Interesting...what is this new device?

We have a wood knife block at work in the break area and I have found the plain edge steak knives are rounded and dull like butter knives. I have began to sharpen them before using them to avoid cuts on my part. They will slice cleanly through paper now with just a little time on the diamond block.

I just sharpened some kitchen knives for a friend. They had never been sharpened.
He got them for a wedding present in 2000. Yes, 17 years.

They were a bit dull.

I have a friend whos knives are SO dull you could run them across your throat and not be taken serious as suicidal. To cut an onion, you're better off just smashing it with a hammer. If I am going there and expecting to do any of the dinner prep, I bring a knife. Same with my in-laws. They have this rag tag collection of extremely dull knives that they say they "keep sharp" using an electric sharpener. I watched him sharpen a knife on it. Two quick swipes on each side and the job was considered done. I bring my own knives if they want someone to carve the turkey.
