Welcome. Are you honing your own edge. What hones are you using on your kitchen knives.
Avenolpey, yes I hone and sharpen my razors and my knives. For western/european knives I use Shapton Glass. For my Japanese knives, JNats. For my razors, I use a 1K synthetic (or less if needed) to set bevels then switch to JNats, specifically, Tajima, Meara, Yaginosima, Ohira Suita, Nakayama - then strop on Roo with .1 CBN. For my JKnives, I typically stop at the Meara or Yaginoshima depending on the edge I desire.
