First master the shave. Honeing will come later. Would be best if you can find a mentor near you to learn how to hone.
Whereabouts in Australia are you, we have a decent member base over here but it is (as you can imagine) rather spread out.

G'Day Wardy, welcome and I hope you have the happiest of Christmases with lots quality family time.
As has been said earlier, learn to shave [I]before/I] trying to learn to hone.
It is much easier than learning 5 different things at once and trying to isolate which variable made the difference to the shave (lather, stropping, honing, angle, pressure, direction) - ask me how I know!!!
Also, keep an eye on the 'Down Under' forum to see if there are any catch-ups in your area. They are worth their weight in gold.
Last of all, get your Dovo honed by a professional before you try using it.
