I use witch hazel all the time. I recently got a bottle of thayer's and I am surprised by the difference between it and the drugstore brand. It seems to be a little thicker and has a different smell. It also tones my skin faster and longer. My skin still feels taut by the next time I go to shave. It smells like licorice to me. Not a smell I like by any stretch of the imagination, but it goes away fast enough that I don't mind it too much. I can't recall which kind of thayer's it was, though.
Most Thayer's varieties contain Aloe Vera extract, and most of the "alcohol free" varieties contain glycerine (I put alcohol free in quotes, because chemically, glycerine is an alcohol; it is just not considered one for labeling purposes). Both of these compounds will make the liquid thicker. As far as I can tell, there are no anise scented versions, but many do contain other fragrences, some of which might have a similar smell. All of the alcohol free versions contain other preservatives, such as citric acid, ascorbic acid or tochophyrol acetate.
