In air I think the two O2 atoms in a molecule hold together strong enough to no react easily with the iron in a blade. Maybe the oxygen in water is more easily stripped away to react with the iron? Maybe a scientist like Utopian can shed more light on this.
Maybe someone can . It's an interesting topic.
