I bought a sight unseen vintage blade from Whipped Dog. I love the blade and seems to be in good shape aside from just the asthetics of the metal itself, which could use some polishing. I knew this would be the case, and am willing to put in some effort.
I am looking at suggestions on restoring the finish back to its full glory. There is no heavy corrosion or pitting, just no shine, except on the cutting edge of course.
Any good metal polish should do the trick. Be aware that if you do use polish it will make honing after necessary in all likelihood.

Bob hit the nail on the head. You are best to wait until it needs to be honed again.
As already noted, polishing will likely kill your edge.
That said, I have tried a great number of polishes.
Many are inexpensive, easily found and work well - such as Mothers.
However, courtesy of this fine forum, I have found my way to 3M marine metal restorer and polish (#09019).
Is more expensive - partly because it comes in an 18 oz jar - but will take away stains and patina better/faster than anything else I have found.
Of course, metal polish will not take the place of sanding where pitting is involved.
