I have a dovo micarta stainless steel and i have alot more carbon steel but despite what i have read i find my stainless steel when honed properly which i have honed on yellow coti and blue with out paste ie chro.5 are very smooth and i wpuld say glide through my fairly tough beard a lot easier than my carbon steel also my 7/8 flami from cs which i think is sergical steel that is also exallant.
I have 2, one with Stainless scales and the other in Ebony- both are excellent shavers and hone easily. That particular alloy, in my experience at least, is no where near as troublesome to hone as say a Friodur or Filarmonica which are extremely HARD steel and take quite a bit of work to set the bevel.
Both of the Dovo Inox blades I own were well crafted with no issues whatsoever. As far as holding an edge:shrug:YMMV.
Add me to the list of stainless fans. I bought a Hess 44 after getting the head nod from Glen and Lynn. Glad I did. In my small collection, it's the best shaver I have. A mint condition (no box) Hess 44 went for 78 bucks last week on ebay. I paid 158 (NOS, with box) for mine. It doesn't seem like they pop up all that regulary on ebay, though.
