If you are asking about how they shave, I think there is none, but it is also a question if one prefer stainless or carbon or the steel type does not matter.
Not so much the shave but its more why are some the Fridur and some just Henckels is one a different type
friodur is made with from harder steel "frozen" the other made with regular method

It's both. Fridours have stainless steel and ice hardening.
I am not one of the steel gurus but I think ice hardening has more to do with controlling the size of the carbides (steel crystals) than anything else, because there are other easier methods of hardening steel.
I assume they mean that the steel is cryogenically frozen not "ice hardened." This doesn't make the steel harder but it does make it much more resistant to abrasion.
Hardness and abrasion resistance are two different characteristics of each steel.
White #2 steel can be taken to HRC 61 and still be easy to sharpen, stainless can be at HRC 58 and be tougher to deal with than white#2.
