I agree that honing plays a crucial role in getting a razor to its optimal sharpness. That said, the aforementioned Klaas attains a level of sharpness beyond that of my other razors. I think it has to do with blade geometry and the steel: the blade is wafer thin yet stone hard, cutting at an extremely acute angle.
BTW, what's the grind on those Mappin & Webbs?
