During the shave I typically either dip the blade in a sink about 2/3 full of water, or run water from the tap over it. I probably ought to be more aware of the chance of dinging.
Then again, might thinking about it instead of just developing good muscle memory make an accident more likely?
I keep a small hand towel and either wear it, folded over the opposite shoulder to the side I'm shaving or lay it on the sink. No rhyme or reason why on any day I do either. I'll sometimes wipe the shaving cream in the palm of my hand when I'm touching up.
I used to wipe, but I've been rinsing for a while now. I don't fill the sink with water to rinse it, I just put the blade under the faucet and turn the water on a bit to rinse it off after every pass or two. I haven't had a problem with dinging it and always put the blade edge down when rinsing under the faucet. But if you think you are prone to hitting the razor on the sink or faucet, it's probably safer to wipe.
I wipe my blade with a damp sponge.
I either use a barber towel that i keep laying on the side of the sink or when im at work i use a stropping motion on the heel of my opposite hand to remove lather and swarf. When i am shaving myself at home i always keep the water faucet turned to the side out of the way so its not over the sink at all. If you are gonna continue being a straight shaver you may want to consider replacing your bathroom water fixture to a movable one. I have high arch one that pivots 180 degrees. Its worth the 20$ to save a $300 or more razor.
Sometimes I wipe on a damp seasponge I keep in a slightly undersized shallow bowl and sometimes I just rinse under cold water. How careful you are is up to you eh. But then Straight shaving is not for the hurried folk...we reserve that pace for the multiblade and goo shavers right guys ha.:D
