Still new to SR shaving. My beard is on the thin side I think. I see full hollow and half hollow blades for sale. Will I really notice much of a difference? I have a Dovo 5/8 full hollow I'm currently using. I'm looking to add a 2nd razor.

There will be a slight difference in that the blade will be a bit stiffer, but not to the point where it will affect technique. It wouldn't be drastically different like comparing an extra hollow to a wedge. You would be fine with either. IMO I'd go for a half hollow for no other reason than variety, but it's up to you.
When I first started with straights, I bought two Dovo Best quality razors, one full hollow and one half hollow to answer this question. I found that I wasn't able to detect much difference between the two.
If you are looking for something to try, a quarter hollow will give you quite a different shaving experience.
I'd say the difference would be nominal but the half hollow in theory would be more forgiving to shaving angle than a full.
Therefore I think it would make a better beginner razor.
Just out of curiosity, what is a Henckels Friodur 5/8 SS considered? Full, half, or quarter hollow?
