Oh my, that is one big question right there!
There are so many different pastes and sprays.
What I would suggest is to check out the wiki on SRP.
It has a really useful rundown on a lot of different sprays and pastes, their benefits and also what to look out for.
Me personally, I hardly ever use them anymore. I use my favorite finishing stone, strop on fabric and leather, and simply shave.
If I, personally, had to choose a paste, coming off say a Naniwa SS 12K, I would choose 0,5 micron CrO.
But that is just my opinion, you will find many more in here:)

Lately I have been happy with .25 and .5 Diamond spray and CrOx spray. I have them sprayed on hanging felt strops and interchangeable felt pads on an SRD modular paddle. The paddle gets the most use.
The consensus is that the CrOx gives a little smoother shave than diamond. I think that was clearly the case when comparing diamond paste with CrOx paste, but I'm not so sure with the sprays. It's definitely not as pronounced a difference, IMO.
Pressed for a recommendation, I would say start with the .5 micron diamond spray on felt.
IMO, the medium you paste can make as much difference as what type of paste you use. Then again, it's all personal preference, anyway.
My personal favourite paste is 0.5 CrOx. It's not as harsh as the diamond and leaves a very nice edge.
I'll use the CrO for most minor refreshes and leave the diamond for those razors that are more finicky.
