On some blades, the Gold Dollar notoriously have exaggerated stabilizers that keep a lot of the edge off the stone, even when honed heel forward.
You must grind down much of the stabilizer to get the heel on the stone, with the GD’s, but for most vintage razors it only becomes an issue when much of the edge has been honed away, the angle changes and the stabilizer is now in contact when a straight stroke is used.
You can grind it, but it is not necessary, just hone heel forward and make sure the stabilizer is off the stone at the beginning of the stroke.
Really once the bevel is set, if it is maintained properly or damaged, you may never have to reset the bevel again.
