I have the feeling that this came a bit late. The OP hasn't posted for a while.

If you're doing this as a part of a business that I feel speed would be key. Not right now since you're still learning but eventually the faster you hone them the better off you'll be. With that in mind I would look into a set of synthetic Water stones and practice on your own razors before you even touch a customer's razor.
