Ya I'd go anywhere from 42mm-50mm. Of course the deeper you go, the more backbone it will have. You could drill some practice holes, at different depths, in some scrap material. See what you like.

Went to Houston today and a chuck if change later came back with some cocobolo, jatoba, zebrawood, and some Bolivian rosewood!

Poplar relatively cheap for practice
Chisels are on the way! Swmbo getting an amazing job offer today might have helped
I got ahold of some old maple, and it turns way better than the poplar. Even with my cheep chisels I'm getting nice chips instead of sawdust.
