    Default Figuring out recipes

    I love cooking and my favourite thing is when you have a breakthrough when you are trying to guess at a recipe or estimate food from somewhere else.
    I was trying to make chinese chicken and sweetcorn soup but most recipes call for creamed sweetcorn - which I have never found here(along with many other ingredients) I experimented for a while and came up with mincing sweetcorn in a meat grinder and then using potato flour(like cornstarch) to thicken at the end. It worked great!
    I have figured quite a few recipes completely from scratch by guessing the process and I really enjoy it!

    Ah, success without recipes or parallel to recipes is indeed very rewarding. Over the few years that I've been cooking, I've played around a lot. My favorite thing is being able to tweak a dish or sauce to fit what I want at that particular time.
