I wouldnt get hung up on wheel size for your first blade. The wheel can be swapped and a tension wheel added with little trouble.
That system should serve you well, my grinder is very similar but I have modified it to accept 1" belts.

I actually contacted vansantsupplies about this today. They sel the 8" wheel sperate, so i asked if the 2 x 48 could handle it. I am waiting back for their reply, and can pm you what they tell me.
Actually just ordered a 2 x 36 from ebay. hope to make a conversion with it. Looks like all that would be needed is a front bracket mod with an 8" wheel and maybe and extention or reduction to accept the proper length belts. Wonder why they stopped making the 8" model..?
Typically, that would be because not enough people buy them to make it worth their while.
Knifemakers typically use larger diameters.
I cannot speak for knifemakers as a group, but the couple I know all use a 12" wheel.
