In the opening scene from, Bridge on the River Kwai, William Holden is pictured shaving with a straight and in one of the old Wyatt Earp movies starring Burt Lancaster and Kirk Douglas, Douglas as Doc Holiday takes the razor away from the barber and shaves himself.

Kathy Bates is actually holding the blade fairly well.
True to history, the films "Lust for Life" and "Gaugin, The Savage" depict Van Ghogh confronting Gaugin with a straight razor in the street. Instead of assaulting him however, he retreats to his house. We all know what Vincent did next.
Also, I didn't see it but I can't help but think just from the title that "There Will Be Blood" must have a straight razor scene.

The movie Miller's Crossing, the other mobster tells his son how to shave.
In the movie Vertical Limit the character Montgomery Wick (played by Scot Glenn) shaves his long beard with a straight. Unfortunately you just see how he's about to start, and not actually the shave itself. I wondered how he got such a good shave with that equipment high in the Himalaya :)
