Any 1000 grit stone will get you there but the CHOSERA 1k does it best. Less time honing and less time lapping the stone in my experience.

I don't set bevels often but when I do I use chosera

You don't. Why would you want to?
Yes it is said if you have the funds. If the bevel is yhe biggest part of honing doesn't it make sense to put most of your eggs in that basket? Chosera is an investment.

I bet if you asked on a knife forum they'd say what kind of knives . LOL...
The site you linked seems to rate the 1k Chosera for both European & J/knives. It's popular for razors too so without owning one I'd say that seems a good choice.
Setting bevels on knives can mean a whole lot more grinding than with razors tho so a separate coarser stone may be of use for knives in addition to a 1k.
Chosera. I got the 800 and it's excellent and a bit cheaper than the 1K
