I read a lot about guys finishing razors on glass plates. Are we talking about shapton glass plates or something different? I believe I recall one gentleman referring to a 20k glass plate and it got me to wondering...

Yup. Had me baffled too!
But you're right it's Shapton.

Finishing on glass plate = Shapton
They go all the way to 30k.
I know they go to 30k, I've just never seen or heard about a shapton 20 or 25k. I've heard of the 16 and then the 30. Have they begun producing a 20 and 25k stone?
The only 20K I'm aware of is the Suehiro Gokumyo 20K. Which isn't to say others don't exist, they just aren't on my radar if they are.
Most* of the time when you hear someone finishing on glass they're probably referring to Shapton Glass stones.
I'm the only one I've seen using an actual piece of frosted glass for honing, in the form of an old glass barber's hone. Yes, it works. I was surprised too.
I've seen 15k, 16k, & 30k. Nothing in between.
I've only used mine once, but I can say for certain that it put an edge on my razor sharper than 8K. I need to play with it more, but I would put the shave in the ball park of Welsh Slates and Arkansas stones. I was both surprised and very happy with how well it worked.
Personally I use a piece of 1/2" thick ordinary glass. Don't know how much of a difference it makes from a shapton glass hone but it works for me.
