are guaranteed to be flat how can I tell if they are flat and how would you flatten one if you decide they are not flat?

Thanked: 156get a flat metal piece like a metal ruler or mesuring instrument...put it on the stone and hold it at light source...if light gets in...it's not flat.
also you canwet it a bit and put it on a flat glass surface...see if it sticks...
the only way to flaten an ark is to use a flat diamond lapping plate or a flat hard substrate like a granit plate with added grit...sandpaper usualy is slow on flatening hard arks.

I have four Dan's Whetstones, True Hard, Black, Translucent. I personally have seen their lapping machines. I've witnessed their quality control processes. You shouldn't have any problems with flatness.
A little advice: Don't impede an 80,000 lbs. 18 wheeler tanker carrying hazardous chemicals.
